Imagine you’ve spent the day hurtling down snow-covered slopes or hiking. After so much effort, it’s time to satisfy your appetite with a delicious raclette. In France, it’s a winter tradition to get together with family and friends to share this feast.

For preparation

The raclette cheese is melted in a small dish using a raclette machine. Depending on your preference, you can remove it when the cheese is well melted, or let it brown a little more to obtain a crispy crust. Then simply scrape the melted cheese over the potatoes. Before the raclette machine, it was quite an adventure to melt the cheese next to the fire and scrape it off with a knife.
